Great Taste Judges' Comments:
"A coarse sugar with a slight, delicious, burnt caramel flavour. It resembles molasses in its intensity. We liked the texture and it dissolved gently in the mouth."
"Deep rich fudge like flavours from the coconut blossom, we detect lovely molasses and liquorice flavour notes here too, we can see many uses for this product, well done."
Many traditional communities throughout the world consider coconut trees as “The Tree of Life”, due to the provision of a variety of accessible products from which they earn their livelihoods. Organic Coconut Sugar is one of the healthiest types of natural sweetener. The sugar has a rich sweetness and a hint of caramel flavour, similar to brown sugar. It has an unbeatable nutritional content which includes essential minerals, vitamins and amino acids. Compared to cane sugar, our Coconut Sugar has a lower glycaemic index of 35, compared to cane sugar’s 50, which means that the body receives a much more sustained, balanced carbohydrate breakdown over time. The Food and Agriculture Organisation of the World Bank recently released a report that states palm sugar was bar none the world’s most sustainable sweetener. Containing a host of valuable nutrients and minerals, coconut sugar still manages to produce on average 50-75% more sugar per acre than cane varieties. Even so, Coconut Sugar is still a direct 1:1 substitute for cane sugar. Add to drinks, desserts and baked goods whenever required.
100% Organic Coconut Sugar. No colours, binders, fillers or preservatives added. Certified organic by the Soil Association and registered by the Vegan society. This product does not contain any substances causing allergies (Directive 2007/68/EC) as ingredients or by possibility of cross-contamination.

Not having tried this before, I wanted to try it out as it's a low GL sugar as opposed to cane sugar which is high GL. The taste is lovely and nutty and not like cane sugar, however still really nice; it has a light nut brown colour and a great smell. It tastes a bit different in freshly made proper coffee for example but is still really tasty and better than organic cane sugar. Converted!

While it is in vogue to be sugar free I don't think this is practical for all, however selecting 'better' sugars is a smarter choice for ensuring a balanced diet. Sugar is still sugar, regardless if it is from a fruit or pure refined sugar, however what sets them apart is the additional nutritional benefits e.g. while an apple is high in sugar (fructose) it also provides vitamins and fibre compared with a teaspoon of refined sugar. So with this in mind, and being a keen baker I wanted to see if there was a smarter choice to be made when using sugar in baking. Coconut sugar seemed an obvious choice and an alternative to natural sweeteners (which also have their issues). It has a lower GI alongside essential minerals, vitamins and amino acids and makes a perfect alternative to normal cane sugar when baking. The easiest comparison is to brown sugar in its richness of flavour and colour. It provides the same result as using refined sugar with the benefit of being slightly better for you (in moderation of course!) and a smart switch when baking.
I admit the price can seem a bit high but it is a higher quality product, and having used it in baking I think you could actually get away with using less than needed (or maybe my pallet is finally adjusting to food that is not as sweet!).
