Sevenhills Wholefoods source their beans from tropical climates in South America, and only those of a premium variety, Criollo. The Theobroma cacao tree is sacred amongst the Mayans and Aztecs. Its fruit, the Cacao bean, is well-known as the basic ingredient in chocolate and has for centuries been forefront in native diets. Cacao beans contain over 300 active substances, including phenyl , ethylamine and serotine .
Cacao beans in their raw form have a high content of antioxidants, and retain all health benefits from their natural state pre-extraction. Cacao paste is often used as a healthy replacement for chocolate in baking. Cacao Paste wafers are rich in a number of essential minerals, including phosphorus, magensium, iron, copper and manganese.
PROCESSING:Sevenhills Wholefoods Organic Cacao is grown in South America. Its seed pods are harvested by hand, which are then broken apart and left until the soft flesh surrounding the bean has fermented and run off as liquid. This fermentation process affects the taste of the beans, which lose some bitter flavours, becoming sweeter. The beans are washed to remove debris and dried. They are then broken into small pieces (nibs). These are then ground slowly until a smooth paste is formed. The paste is cooled into moulds, where it solidifies as ‘wafers’ – conveniently-sized portions.

INGREDIENTS: 100% Organic Cacao paste. No colours, binders, fillers or preservatives added. Certified organic by the Soil Association and registered by the Vegan society. This product does not contain any substances causing allergies (Directive 2007/68/EC) as ingredients or by possibility of cross-contamination.
SUGGESTED USE: Cacao paste wafers are great as a snack, yet they can also be used as a healthy replacement for normal chocolate in baking recipes. Sevenhills Wholefoods recommends consuming up to 20g per day.

made great brownies and got great reviews for them with this cocoa.! it has a great taste and smell its nothing like shop chocolate its very dark bitter cocoa with a strong aroma and flavor so you only would use this in cooking or for hot chocolate or maybe even for savory mexican sauces. i had a few squares in a cup with hot milk when i got it and after was rolling around with the dogs telling them i love them. i don't normally do that so i figure it has some love buzz qualities. kept me awake a bit but not like coffee…more relaxed and alert than fizzing inside. so it might be a good beverage if your feeling you need a boost. looking forward to making truffles soon:)
